MYTH: Vegetable oil is the best oil for you and saturated… the worse.

We are the only culture that cooks in vegetable oil

TRUTH: The ratio of omega 3, 6, 9 and saturated should be 1 to 1 across the board. Today it is 20 to 1 unsaturated vegetable oil to omega 3, 9 and only slightly lower for saturated. Additionally, most of the vegetable oil (usually soybean and corn) in our Western diet (about 90%) is hydrogenated—trans fat. It should be noted as well that vegetable oil is high in arachidonic acid (AA), which is highly inflammatory to the body. When vegetable oil is used for cooking at medium to high temperatures, it creates a known carcinogen called acrylate.

We are the only culture that cooks in vegetable oil. In general… Russians (meat drippings), Europeans (butter and olive oil), Asian (coconut oil). None on these create acrylate and inflammation. Though statistically they all smoke more than Americans, degenerative disease is about half what it is domestically. We’ve been sold a lie at the cost of our health, but then sick people pay more. Always follow the money if things don’t make sense.

Now saturated… cultures from antiquity have had saturated fat as their staple—our Mediterranean ancestors, Inuits, American Indians, Australian Aborigines, Masai herdsman of Africa, etc., —all on a high cholesterol, high saturated fat diet of livestock, wild game and their by-products. These cultures have been known for their longevity and health.

The heart runs on hard minerals and saturated fat and the more we’ve taken saturated fat out of our diet, the more heart disease has gone up in perfect step. The caveat to all this is that it applies only to free range, grass fed livestock—the way God intended. Conventionally grown livestock is fed grain and soybean (not their natural diet and changes the fat to high omega 6—inflammatory) and medicated from birth to death with antibiotics, estrogens (to mature faster and fatter) and worse so the fat and nutritional profile is completely perverted. For the benefits of saturated fat, they must be from the right source.

Finally, coconut and palm oil (the tropical oils) have been demonized because they are saturated as well (medium chain saturated fatty acids). Coconut and palm oils simply put are super foods, high in lauric and capric acid, which are anti-bacterial/fungal/viral. They stimulate the thyroid for weight loss and proper fat to muscle ratio—they are super foods. The benefits of these foods have been muted again because sick people pay more—conventional healthcare in general is about the money, not the principle.
